National Chicken Council issues cooking, handling guidelines after FSIS alert

The National Chicken Council and the Partnership for Food Safety Education issued a statement today noting the importance of proper cooking and handling of food in preventing illness.
The statement follows a Department of Agriculture alert Monday regarding an increased incidence of salmonella cases, mostly in California, that was caused by eating undercooked or improperly handled raw chicken, spanning a nine-month time frame. There is no recall in effect and fully cooked chicken represents no risk, the statement noted.
USDA said it has been unable to link the illnesses to a specific product and production period, but Bill Marler, a Seattle-based food safety attorney, questioned in his blog today why there has been no recall.
